Healthy Wholesome Pumpkin Pancakes

 I love pumpkin pie but only indulge at Thanksgiving. This recipe allows me to get that same great flavor without any guilt! Pumpkin is loaded with several immune-boosting nutrients including Beta Carotene that converts to Vitamin A. It is nutrient-dense, high antioxidant, low-calorie squash with healthy carbohydrates. While Pumpkin Pie is loaded with fats and sugars, these amazing pancakes give all the flavor without the inflammatory-inducing, artery-clogging ingredients of the delicious dessert. Watch your toppings, however. While Maple Syrup is much better than refined sugar, it is still a sugar and can have adverse effects if you consume too much.

 

Recipe yields 6 to 8 medium pancakes.

 

INGREDIENTS

1 cup King Arthur Gluten-Free Flour (or Buckwheat or Almond Flour)

1 tablespoon baking powder

3/4 teaspoon Mountain Valley Seasonings Pumpkin Pie Spice (or Cinnamon Blend)

1/4 teaspoon salt

1 large egg (or egg subtitute)

2 tablespoons Swerve Brown Sugar Substitute

1 cup milk of choice (I like unsweetened Coconut Milk)

1/2 teaspoon vanilla extract

2 tablespoons Avocado oil

1/3 cup fresh or canned pumpkin purée

 

 

 

INSTRUCTIONS

  1. Preheat griddle or skillet to 350°F (use a little oil if necessary – my griddle is non-stick, so I skip the oil here).
  2. Mix the first 4 ingredients in a small mixing bowl. Set aside.
  3. In a mixing bowl, combine the egg, Swerve, milk, vanilla extract, and oil. Whisk until frothy. Fold in the pumpkin puree.
  4. Gradually add the dry ingredient mix into the wet mix, making sure there are no lumps, and it is well incorporated.
  5. Pour the pancake mix into 3 ½ inch pancakes on the hot griddle or skillet.
  6. Cook for several minutes until it is mostly cooked through. Only the middle should still be a little gooey.
  7. Flip and cook for approximately 2 minutes more or until golden brown and the texture in the center feels consistent with the outer edges of the pancakes.
  8. Serve immediately with your favorite garnish. Some suggestions: Plant-based almond oil butter, Maple Syrup, sugar-free, dairy-free Cool Whip, pecans or walnuts, apple compote, etc.
